  • 1½ lb Cooked Shrimp; Cleaned, shelled, deveined and cut into 1" pieces
  • ¾ cup Rice
  • 1½ cups Chicken Broth
  • 1 cup Chopped Carrot
  • ½ cup Chopped Onion
  • ¼ cup Chopped Green Peppers
  • ⅛ tsp Saffron
  • ⅛ tsp Black Pepper

Preheat oven to 375 degrees. Make rice according to directions. In a large pot, combine carrot, green peppers, onion, chicken broth, saffron and pepper and bring to boil. Turn off heat, cover and let sit for 20-25 min. Add mixture and shrimp to rice. Stir and pour into casserole dish. Cover dish and bake for 10-15 min. Sprinkle with cheese if you like.
