  • 1 (7 lb.) medium-large smoked pork picnic shoulder
  • 1 1/2 C. sugar
  • 1/2 C brown sugar, packed
  • 1 C honey
  • 1 (6 oz.) can frozen orange juice concentrate, thawed
  • 1 tsp. whole cloves

Begin by making crosswise slits, 1/2-inches apart, halfway through ham so that your knife touches the bone.  Place ham in a deep bowl and barely cover with water.  Stir in sugars and soak for at least two days in the refrigerator.  After, drain and place ham in a roasting pot.  Line the pot with enough foil.  Pour honey and orange juice all over the pork.  Stick cloves all over meat and wrap tightly in the foil.  Bake at 200 degrees F. for 6-7 hours.  Unwrap and bast occasionally with honey mixture.  Unwrap and finish baking at 450 degrees F. for about 15 minutes or until crispy.
