  • 2 cups graham crackers, crumbled
  • 1 tsp. cinnamon, grated
  • ¼ cup margarine, melted
  • ½ cup cream cheese
  • 1 tbsp. lemon juice
  • 3 tsp. vanilla extract
  • 3 large eggs

Preheat oven to 500 degrees. Combine graham cracker, cinnamon, and margarine in a large bowl. Mix thoroughly. Line a cake pan with parchment paper. Press graham cracker mixture onto bottom of the pan making sure it is spread evenly. Leave in freezer for about 30 minutes. Combine cream cheese, lemon juice, and vanilla extract in a large bowl. Mix thoroughly until of a creamy texture. Crack eggs into the mixture and mix again thoroughly. Remove crust from freezer. Pour cream cheese mixture into the crust. Bake for about 10 minutes on 500 degrees then for 35 minutes on 400 degrees. Remove and cool for about 1 hour.
