  • 2 lb. lean ground beef
  • 3/4 C. raw onion, chopped
  • 1/2 C. green peppers, chopped
  • 2 large eggs
  • 1 T. salt
  • 3/4 T. black pepper
  • 1 can diced tomatoes
  • 2 1/4 C. dry, grated bread crumbs
  • 1/2 C. ketchup
  • 6 medium russet potatoes
  • 4 T. margarine (do not use spread)
  • 1/4 C. milk
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Preheat your oven to 350°F. In a large bowl, combine all ingredients except ketchup and mix thoroughly with hands. Press into a loaf pan or shape the mixture into a loaf and place into a baking dish. Bake for 60 minutes. Remove from oven and invert over a wire rack to drain the grease and juice. Spread the ketchup over the loaf and bake for another 30 minutes. In a large pot, boil water with salt. Wash potatoes and cut into small pieces. Drop into water once boiling and cook until fork tender. Drain water. Add all ingredients and mash until almost lump-free. Serve with your meatloaf.
