Corn and Beef Pie

A hearty main dish cooked completely in the microwave!

  • 3/4 lb. ground beef
  • 2 Tbs. chopped onion
  • 1/8 tsp. garlic powder
  • 8 oz. can whole tomatoes, drained (reserve 1/2 C. liquid)
  • 8 oz. can corn, drained
  • 1 1/2 tsp. chili powder
  • 1 egg
  • 1/2 C. cornmeal
  • 1/2 C. shredded cheese
  • Optional Additions/Substitutions:
  • 1 small clove garlic, finely chopped, instead of garlic powder
  • 12 pitted ripe olives (green or black) sliced
  • A sprinkle of paprika on top for eye appeal

Crumble ground beef into microwave safe baking dish. Add onion and garlic. Cover loosely and microwave until no longer pink. Drain. Stir in corn, tomatoes, olives, chili powder and salt to taste. Microwave until hot and bubbly. Beat egg. Stir in cornmeal and reserved tomato liquid. Pour over meat mixture and sprinkle with cheese. Microwave on high until topping is no longer doughy, about 3-6 minutes.
