  • 4 Cornish hens
  • 2 cups of rice
  • 1 cup of water
  • 1 + 1 cups of chicken broth
  • ½ cup of melted butter
  • 1 tablespoon of butter
  • 8 small sprigs of rosemary
  • 1 small onion, finely chopped
  • 2 tablespoons of minced garlic
  • 2 tablespoons of ground black pepper
  • 1 tablespoon of salt
  • salt and pepper to taste

Preheat oven to 450 degrees Fahrenheit.
Mix melted butter, onion, minced garlic, black pepper and salt together, then thoroughly brush the hens with the mixture. Place the hens in a baking dish with one 1 of chicken broth and broccoli. Pour the remaining butter mixture over the hens. Bake covered for about 30 minutes until the meat is completely cooked.
Meanwhile, bring 1 cup of water and 1 cup of chicken broth to a boil in a large pot. Stir in rice, tablespoon of butter and salt. Let simmer covered for about 15 minutes. Remove from heat but let steam for another 5 minutes. Fluff, then serve with the roasted broccoli and Cornish hen!
