  • 2 cups of cauliflower florets
  • 1 yellow onion, chopped
  • 1 cup of peas
  • 2 medium potatoes, peeled and scalloped or cubed
  • ¼ cup of heavy cream
  • ½ of cup crushed tomato
  • 1 tablespoon of oil
  • 1 tablespoon of garlic powder or minced garlic
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of chili powder
  • ¼ cup of chopped coriander
  • salt and pepper, to taste
  • Naan bread

In a large pot, boil the potatoes in enough water with salt for 5 minutes. Add the cauliflower and cook for another 5 minutes.
While the potatoes and cauliflower florets are cooking, heat the oil in a pan and sauté the onions until soft. Add peas, garlic, cumin, turmeric, and a dash of salt and sauté for another minute or two.
Drain the potatoes and cauliflower if necessary, then add contents of the pan into the same pot. Add the can of crushed tomatoes and heavy cream and cook on high for 5-10 minutes, stirring as the mixture thickens.
Add salt to taste and serve each serving topped with chopped coriander and a side of naan bread.
