  • 1 pound okra
  • Salt and pepper
  • ½ tablespoon garlic powder
  • Yellow cornmeal
  • ¼ cup bacon fat

Wash and cut the okra into ¼ inch slices. In a bowl, combine corn meal, salt, pepper, and garlic powder. Over medium heat, melt the bacon fat in a frying pan. If you don’t have bacon drippings you can easily swap it out for vegetable shortening, however you might want to add more salt and pepper to the breading to make up for the flavor. Dip the okra in the breading and coat well. Fry the okra slices until they are golden, about 1-2 minutes on each side. Allow to cool for a couple minutes and then enjoy with whatever dipping sauce you like!
