  • Cranberry Cake:
  • 3 eggs
  • 2 cups of sugar
  • ¾ cup of unsalted butter, softened
  • 1 teaspoon of almond extract
  • 2 cups of all-purpose flour
  • 2 ½ cups fresh cranberries
  • Meringue Topping:
  • 2 egg whites
  • 4 tablespoons of sugar
  • ½ teaspoon of vanilla extract
  • Preheat the oven at 350F

Using a large mixing bowl, beat the eggs with sugar for about 5 minutes until it appears slightly condensed and nice in color. Slowly add the butter and blend into the mixture for 2 minutes. Incorporate the mixture with flour until it has a nice consistency. Add in the cranberries and pecans.
Using a 13 inch x 9in baking pan, grease the pan. Add the batter into the pan and bake for 45-50 minutes. Or insert a toothpick in the center until it comes out clean.
Meringue topping:
In small mixing bowl, beat the egg whites until it becomes frothy. Slowly, add the sugar and beat with the egg whites until it is stiff. Lastly, add the vanilla extract.
When the cake is fully baked, add the meringue topping on the cake and spread it evenly.
