This takes everything great about an omelet and a tart by bringing them into one great dish. What’s even better is that the crust adds a hint of sugar while the cheese is a little bit sharp.

  • 1 sheet of puff pastry
  • 2 pound of bunches of asparagus
  • 4 large eggs
  • 1 small onion, diced
  • 1 cup of heavy cream
  • 1 cup of cheddar cheese, shredded
  • 1 tablespoon of butter, melted
  • 1 tablespoon of olive oil, divided
  • ½ teaspoon of salt
  • ½ teaspoon of pepper

Begin by preheating the oven to 350 degrees and rolling out the puff pastry onto a large baking pan. Then brush the puff pastry with olive oil, line the asparagus on top and set aside. Next, whisk together the eggs, heavy cream, butter, salt, and pepper then stir in the onions and shredded cheese. Pour the mixture on top of the puff pastry and asparagus. Drizzle olive oil on top and bake for 30 minutes, or until the asparagus is tender. Serve and enjoy!
