Avocado is full of good fats and antioxidants. It also makes the pesto creamy and smooth so you won’t have to add additional cheese to the sauce.

  • 1 box of spaghetti
  • 1 avocado, diced
  • 2 cloves of garlic, minced
  • ¼ cup of olive oil
  • ¼ cup of basil leaves, chopped
  • 1 tablespoon of pine nuts
  • Fresh grated Parmesan, grated
  • Salt and pepper, to taste

Cook the pasta as described on the package, then drain and set aside. In the meantime, add the avocado, garlic, olive oil, basil and pine nuts to a blender. Mix the pesto until creamy and smooth. Add a heaping ½ cup of the pesto to the pasta, then top with fresh parmesan and basil if desired. Serve and enjoy!
