  • 1 cup of broccoli florets, steamed and chopped
  • 2 cups of sweet corn
  • ½ onion, chopped
  • 1 cup of heavy cream
  • 2 cups of cheddar cheese
  • 3 cup of vegetable broth
  • 2 tablespoons of flour
  • 2 tablespoons of butter
  • 1 tablespoon of garlic powder
  • salt and pepper, to taste

Heat butter in a pan and sauté the onions until soft. Add broccoli and heavy cream and simmer for 5 minutes.
In a blender, blend vegetable broth, corn, flour, garlic powder and a pinch of salt.
Combine the blended mixture and the contents of the pan in a large pot and cook for 15 minutes. Add cheese; cook and stir for another 5 minutes until smooth.
Add salt and pepper to taste. Top off with extra cheddar cheese and a bit of thyme, or another herb of choice, if desired.
