  • 2 cups of basmati rice
  • 4 cups of water
  • 1 tablespoon of oil
  • 2 pounds of chicken, cut into bite sized pieces
  • 1 yellow onion, diced
  • 2 cups of heavy cream
  • 1 ½ cup of tomato sauce
  • 6 tablespoons of butter
  • 1 tablespoon of garlic powder
  • 1 tablespoon of Garam masala
  • 1 teaspoon of cumin
  • Handful of fresh cilantro leaves
  • salt and pepper

Boil water in a pot and stir in rice, oil and salt. Let simmer covered for about 15 minutes. Remove from heat but let steam for another 5 minutes.
While the rice is steaming, melt butter over medium-high heat in a large saucepan. Add onion and chicken for about 5 minutes, adding garlic powder, Garam masala, cumin and salt during the process. Add the tomato sauce and cook covered for 5 minutes. Stir in the cream and lower the heat to simmer covered for 10 minutes.
Once the chicken is completely cooked and the mixture has somewhat thickened, serve over fluffed rice and garnish with cilantro.
