  • 1/2 bulb garlic, peeled
  • 1 C. extra virgin olive oil
  • 3/4 (1-pound) loaf sourdough bread, cubed
  • 1 C. ghee, divided
  • 1-2 bunches romaine lettuce, torn
  • 1 bottle Caesar salad dressing

Create the croutons by mixing together the garlic and oil inside of a small saucepan. Simmer for about 15 minutes, which is when the garlic cloves should be a light golden color. When done, pour the oil through a fine sieve, squeeze all the juice from the cloves and then get rid of all of the solids. When the garlic oil is created, set it aside. Preheat your oven to 300 degrees F and then lightly oil a baking sheet.

Transfer the bread cubes onto the baking sheet and make sure they are in a single layer. Bake for about 20 minutes, which is when the bread should be lightly browned. Remember to turn the bread cubes occasionally when baking. Melt 1/3 cup ghee and 1/3 cup garlic oil inside of a large, nonstick skillet. Cook the bread cubes inside of this mixture in batches until they are golden brown and remember to turn regularly. Add more ghee and garlic oil when necessary and when finished, let the croutons drain inside of a basket lined with paper towels. Drain for 20 minutes.

Take out a large bowl and place the romaine lettuce inside. Drizzle with as much dressing as you want and then toss until evenly coated. Serve alongside croutons.
