These potato patties made with carrots and zucchini are tasty and easy enough to both make and snack on with your kids this weekend!

  • 2 cups of grated zucchini
  • 1 cup of grated carrots
  • 1 cup of mashed potato
  • 1 large onion, diced
  • 1 egg, beaten
  • 3 tablespoons of butter, softened at room temperature
  • 2 tablespoons of minced garlic
  • 1 tablespoon of soy sauce
  • salt and pepper

In a bowl, combine the zucchini, carrots, potato, onion, egg, butter, garlic, soy sauce and salt and pepper; mix thoroughly. Mold 3 tablespoons of the mixture into patties.
Over medium-heat in a greased pan, cook all the patties 4 minutes on each side until a bit browned and crispy. Place cooked patties onto paper towels and slightly cool.
Serve warm with sour cream on the side.
