These cheesy mashed potatoes are a great side to any main course meal. With the cheesy goodness this potatoes will be a big hit.

  • 1 1/4 lbs. all-purpose potatoes
  • salt
  • pepper
  • 1 C. sour cream
  • 3 tbsp butter
  • 1 lg. garlic clove, minced
  • 1 Tbs. chopped parsley
  • 1 C. shredded cheddar cheese

Peel potatoes and cut them in quarters. Put the potatoes in a crockpot.  Set the crockpot on high.  Add a little olive oil and heat for 2-3 hours.  Once the potatoes are tender and soft begin to mash them.  Add the rest of the ingredients into the crockpot and stir.  Let the mashed potatoes sit for about 1-2 hours and then serve them up.
