This is a great healthy recipe with lots of yummy veggies that all cook together.

  • 3 chicken breasts with no skin
  • 1 medium sized head broccoli
  • 1 medium head cauliflower
  • 6 carrots
  • 6 small onions
  • 1/2 tsp. salt
  • Coarse ground pepper to taste
  • 1/2 tsp. garlic powder
  • 2 lemons sliced

In a large Dutch Oven combine chicken with enough water to cover meat.  Bring to boil, turn heat down to medium and cook about 15-20 minutes.  Cover meat and cook 10 more minutes.

Cut onion into wedges. Peel carrots and cut into 2 inch pieces, layer on bottom of crockpot. Cut broccoli and cauliflower into florets and layer on top of carrots. Take onions and place on top of vegetables. Take chicken and put on top of onion. Cover meat with lemon slices and remaining broth. Cook on low heat for about 6 hours. When finished cut chicken into slices, and serve with vegetables mixed together with thickened broth. Serve with crusted rolls, and rainbow sherbet for dessert.
