  • 1 lb. lean boneless pork, cut into 1" cubes
  • 3 C. canned hominy, drained and rinsed
  • 2 red chiles, stemmed, seeded and chopped
  • 1 large onion, chopped
  • 5 cloves garlic, crushed
  • 1 tsp. dried oregano
  • 1/2 tsp. ground cumin
  • 5 C. chicken stock
  • 1 1/2 C. red chile sauce
  • 2 tsp. salt
  • Cilantro and shredded Parmesan cheese for topping

Lightly brown pork on all sides for about 4 to 5 minutes. Mix pork and remaining ingredients except for toppings in crockpot. Cover and cook on low for 8 to 10 hours. Garnish with cilantro and cheese before serving.
