  • 1 Pound of Boneless Chicken Breast
  • 2 Diced Carrots
  • 2 Diced Celery Stocks
  • 1 Diced Onion
  • 1 Diced Red Pepper
  • 2 Cubed Potatoes
  • ¾ Cup of Peas
  • 1 Cup of Baby Spinach
  • 2 Minced Cloves of Garlic
  • 5 Cups of Chicken Broth
  • 1 Cup of Heavy Cream
  • 1 Bayleaf
  • 2 Cups of Cheese Tortellini
  • 1 Teaspoon of Red Pepper Flakes
  • 1 Pinch of Salt (or more to taste)
  • 1 Pinch of Pepper (or more to taste)

Pour everything minus the tortellini into the crockpot -- the chicken, carrots, celery, onion, red pepper, potatoes, peas, spinach, garlic, broth, heavy cream, bayleaf, red pepper flakes, salt, and pepper. Cook it on a low heat for 5-6 hours and then take out the chicken to shred it. Add it back into the crockpot, along with the tortellini, for another 15 minutes and then serve warm!
