8 tostadas


  • 14 oz. can diced tomatoes
  • 1 medium onion, diced
  • 3 C. shredded cooked turkey (chicken works, too)
  • 8 corn tortillas
  • Olive oil or canola cooking spray
  • 1 pitted avocado
  • ΒΌ C. salsa
  • 2 Tbs. reduced-fat sour cream
  • 2 Tbs. fresh cilantro, chopped
  • 1 C. romaine lettuce, shredded
  • 1/2 C. monterey jack cheese, shredded

Preheat to 375 degrees F
In a medium pan, bring canned tomato and liquid and bring to a boil
Add onions and cook until translucent
Add turkey and cook until heated through
Coat both sides of tortillas with cooking spray
Lay the tortillas flat on a baking sheet (you may need two sheets)
Turn once and bake until light brown and crisped
Mash avocado into a medium bowl
Stir in sour cream, salsa and cilantro until combined
Spread the tortillas with avocado mixture to assemble tostadas
Top with turkey mixture, cheese and lettuce
