  • 1 stick butter, softened
  • ¾ C. powdered sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 ¾ C. flour
  • Dash salt
  • ½ C. apricot jam

Preheat oven to 375 degrees. In a large bowl, cream together butter and powdered sugar until light and fluffy. Beat in egg and vanilla until well combined. Mix in flour and salt, cover, and refrigerate to set up. Roll out dough, cut out shapes, cut a small circle out of half of your cookies, and bake for 10 to 12 minutes until golden brown. Let cool completely, spread full cookies with jam, and top with cut out cookies.
