Madeleines are actually small cakes and not cookies. They also make a sweet great start to your weekend morning. Sit down in front of the window, imagine you’re on a Parisian balcony, and eat a few of these with a fresh cup of coffee or black tea.

  • 6 egg whites, room temperature
  • 1 ½ cups of powdered sugar
  • 1 cup of dark chocolate, chopped
  • 2/3 cup of butter
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon of salt
  • ½ teaspoon of vanilla

To begin, brush butter onto the madeleine baking pan. Melt the remaining butter, dark chocolate, and vanilla in a small pot, making sure to stir constantly until smooth. Once melted remove the pot from heat and slowly sift in the sugar, flour, cocoa powder, and salt. Stir together and set aside. Next, beat the eggs until frothy and fold in the chocolate mixture with a spatula until well combined. Pour the batter into the greased pan and refrigerate for two hours. In the meantime, preheat the oven to 375 degrees. Once the batter is chilled, bake for 15 minutes. Before serving, garnish with additional powdered sugar.
