  • 2 1/4 C. all-purpose flour
  • 1 1/2 C. rolled oats
  • 1 Tbs. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 C. butter, softened
  • 1 C. sugar
  • 3 eggs
  • 1 C. milk
  • 2 C. cranberries, chopped
  • 2 Tbs. sugar
  • 2 tsp. orange peel, finely shredded

Preheat oven to 350 degrees F. In a large bowl, mix flour, oats, baking powder, soda, and salt. Set aside. In a large mixing bowl, beat butter with an electric mixer on medium speed for 30 seconds. Add 1 C. sugar. Beat until well combined. Add eggs and beat until mixed. Alternately add flour mixture and milk to butter mixture, beating on low speed after each addition until combined. Toss cranberries with 2 Tbs. sugar. Fold into beaten mixture with orange peel. Spoon batter into greased 10-inch tubed pan. Spread evenly. Bake for 50 to 60 minutes or until a wooden toothpick inserted near center comes out clean. Cool on wire rack before serving.
