  • 5 eggs, beaten
  • 2 c. of milk
  • 1 tbsp of olive oil
  • 2 c. of spinach
  • 2 c. of potatoes, sliced
  • 1 onion, chopped
  • 1 c. of mushrooms
  • 2 medium tomatoes, chopped

In a mixing bowl, mix eggs, milk, olive oil, salt and pepper. Arrange potatoes, spinach, onion, tomatoes and mushrooms in a buttered baking dish. Pour the egg mixture over the ingredients. Sprinkle with mozzarella cheese and bake at 350 degrees for 30 minutes.
