Hard-boiled eggs over the generations have remained pretty much the same. They're a tasty appetizer, but nothing terribly special. Unless you make these deviled eggs with a twist. They offer something new that will make heads turn at the next neighborhood barbecue. The twist here is two-fold. First, avocado gives the filling of these eggs a delightful creamy texture that is healthier than mayonnaise. Second, the entire dish is given a little extra zing with some lime juice and cayenne pepper.

  • 4 hard boiled eggs
  • 1/2 avocado
  • 1/2 tsp. cayenne pepper
  • 1 tsp. lime juice
  • 1 tsp. lime zest

Cut each of the eggs in half lengthwise and scoop out the yolk. Put the yolks into a separate bowl and set the whites aside on a plate.

In another small bowl, mash the avocado until creamy and smooth. Add the lime juice and cayenne and mix well. Then mix the avocado mixture into the bowl of egg yolks and mash with a fork or potato masher until smooth and creamy. Add a little salt if necessary to season.
Spoon or pipe the yolk mixture back into the hollow egg whites and sprinkle with a little cayenne for garnish. Serve chilled.
