Baked cheesecake wrapped with crepes. On top, lots of strawberries and blueberries. Try it for a birthday or special occasion! This is my best birthday cake recipe.

  • Cheesecake:
  • 35-40 pieces of Ritz Crackers
  • 4 Tbs. butter, softened
  • 8 oz. cream cheese, at room temperature
  • 4 Tbs. sugar
  • 2 eggs
  • 4 Tbs. flour
  • 3/4 C. milk
  • 1 Tbs. lemon juice
  • 1 lb. strawberries
  • 10-12 blueberries
  • Crepes:
  • 6 Tbs. flour
  • 2 Tbs. sugar
  • 1 egg
  • 3/4 C. milk
  • 2 Tbs. butter, softened

Put crackers in a Ziploc bag and crush. Melt 4 tablespoons of butter and add. Mix well. Transfer the crackers to a 9-inch cake pan and, with your hand, press mixture firmly on the bottom of the pan. Chill in the refrigerator until it sets.  Preheat the oven to 350 degrees. Mash half of strawberries with a fork in a bowl. Cut the rest of strawberries into halves or fourths, depending on how big the strawberries are. In a bowl, beat cream cheese and add 4 tablespoons of sugar. Mix well. Add 2 eggs, 4 tablespoons of flour and 3/4 cup of milk to the bowl. Mix well. Pour half of the batter into the cake pan, then put in the mashed strawberries and pour in the rest of the batter. Bake for 50-60 minutes. Let cool.

In the meantime, make crepes. In a bowl, combine 6 tablespoons of flour and 2 tablespoons of sugar. Mix well. Then, add 1 egg and 3/4 cup milk. Mix well. Melt 2 tablespoons of butter in microwave and add to the bowl. In a lightly oiled frying pan, make 6 crepes. Circle crepes, laying each on the cutting board. Then place the baked cheesecake in the center. Wrap the cheesecake with crepes and then tie a ribbon to hold the cake. Wrap the way you like but make some frills with the edge of each crepe. Place the rest of cut strawberries and blueberries on top.
