  • 1 lb. ground beef
  • 1 (15 oz.) can refried beans
  • 1 (6 oz.) can tomato paste
  • 2 C. shredded Mexican cheese blend
  • 1 pkg. burrito seasoning
  • 16 tortillas
  • 1/2 C. diced tomatoes
  • 1/2 C. shredded lettuce

In a skillet, cook the ground beef and burrito seasoning over medium high heat, breaking up the meat into small pieces. In a bowl, put the beans and the tomato paste and mash together and well combined. Add the beans and 1/2 C. shredded cheese to the ground beef and mix until the cheese is melted. Remove from heat once everything is well combined. Place 1/4 C. of burrito filling in each tortilla and top with the shredded lettuce and diced tomatoes before rolling it up. Place two burritos on plate, side by side, and sprinkle with shredded cheese. Put the plate in the microwave and heat to melt cheese, approximately 1 minute.
