Easy Bean Salad

Even though is a bean salad, there are still a ton of vegetables in the mix!

  • 2 Tbs. olive oil
  • 2 Tbs. lemon juice
  • salt
  • pepper
  • 2 C. canned cannellini beans
  • 1 sm. yellow bell pepper, diced
  • 1 C. cherry tomatoes, halved
  • 2 green onions, cut into 1/2-inch pieces
  • 1 bunch arugula, trimmed

In a medium bowl, whisk the oil, lemon juice and salt and pepper to taste. Drain beans and add them to the dressing. Stir and let stand for 30 minutes. Add pepper, tomatoes and onions. Toss them all together, and add more seasoning if needed. Arrange arugula on a platter and top with salad. Serve.
