  • 1 1/2 C. flour
  • 1/2 C. sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. salt
  • 1 egg, lightly beaten
  • 1/2 C. milk
  • 1/3 C. butter, melted
  • 1/4 C. sugar
  • 1/2 tsp. ground cinnamon
  • 1/3 C. butter, melted

Preheat the oven to 350 degrees and grease or line a muffin tin. In a bowl, combine the flour 1/2 C. sugar, baking powder, nutmeg, and salt. Mix well and create a crater in the center of the mixture. In another bowl, combine the egg, milk, and 1/3 C. melted butter. Stir well and then pour the egg mixture into the crater in the dry ingredients. Stir together until the mixture is just moist. The batter may be lumpy. Spoon the batter into the muffin cups. Bake the muffins for 20 to 25 minutes.

In another bowl, combine 1/4 C. sugar and cinnamon. Put the melted butter in a separate bowl. When the muffins are done baking, dip the tops in the melted butter and then in the cinnamon sugar mix. Serve warm.
