Biscotti should not be confused with cookies because unlike cookies, the former is twice-baked. One can add any type of fruits and nuts to a basic biscotti recipe in order to make it more delicious and appetizing. Cranberry Biscotti is a variation of the regular Biscotti recipe. It is great for the winter because the red color in the cookies gives it a festive touch. Although there are plenty of other flavor combinations, nothing beats the simplicity of adding cranberries to the biscotti recipe.

  • ¼ cup olive oil
  • ¾ cup sugar
  • 2 teaspoon vanilla essence
  • ½ teaspoon almond extract
  • 2 eggs
  • 2 cups flour
  • 2 teaspoon salt
  • ½ cup dried cranberries
  • 1 teaspoon baking powder

Mix together the oil and sugar in the bowl and then add in the vanilla and almond extracts and the eggs. Now, fold in flour, salt and baking powder into this wet mixture and then add the cranberries to make the cookie dough.

Now line a baking tray with parchment paper and place the cookie dough log. Allow it to bake for 35 minutes. Now take the log out of the oven and cut into thick diagonal slices and then pop the individual slices into the oven and bake for another 10-15 minutes.
