Easy Crock Pot Italian Beef

  • 3-4 lb chuck roast or roast cut of your choice
  • salt, pepper
  • olive oil
  • 2 8 oz. jars of your favorite jardinière pickled veggies
  • water
  • Hoagie rolls
  • Shredded mozzarella cheese

Trim excess fat from roast.  Sprinkle all sides with salt and pepper.  Heat oil in skillet or Dutch oven over med. high heat.  Brown all sides of roast, approx. 5 min. per side.  Transfer to slow cooker.  Add jardinière.  Add enough water to cover roast.  Cook on low 8-10 hrs or high, 4-6 hrs.  Remove roast to large bowl.  Shred meat using two forks.  Discard all fat and bones, and set aside.  Strain vegetables from broth and add to meat.  Skim fat from top of broth. Return meat and veggies to slow cooker with broth. Assemble sandwiches.  On a foil lined sheet pan, split rolls 3/4 of the way through.  Add meat and veggies.  Top with mozzarella cheese.  Broil for 8-10 min. or until cheese is melted.  Serve with remaining juices.  Serves 8.
