  • 2 lbs. boneless chicken breasts
  • ¼ C. flour
  • ¼ C. soy sauce
  • ¼ tsp. red pepper flakes
  • ½ tsp. black pepper
  • ½ tsp. grated fresh ginger
  • ½ C. unsalted cashews
  • 1 T. canola oil
  • 2 T. rice vinegar
  • 2 T. ketchup
  • 1 T. brown sugar
  • Garlic clove

Mix the flour and black pepper in a large zipper bag. Add the chicken and shake the bag. Every piece of chicken should be coated with the flour and pepper. Heat the oil in a pan over medium heat. When the oil is ready place the chicken in the pan. Both sides should be browned. Once the chicken is browned place the chicken into the crockpot. Mix the soy sauce, vinegar, ketchup, sugar, garlic, and pepper flakes into a bowl. Pour this mixture over the chicken. Let it cook for 3-4 hours. When ready to serve add in the cashews.
