Easy Pork Banh Mi Sandwich

Making a Banh Mi sandwich are a great way to use your leftover pork. This Vietnamese inspired dish is topped with a generous portion of cilantro for a crisp flavor and a mayo-siracha sauce for a touch of spice. The vegetables are typically pickled for at least 30 minutes, but the fresher option allows for more crunch and a quicker kitchen to table turnover.

To begin, toss together the cilantro, mint, carrots, radish, and jalapenos with the vinegar and brown sugar. Let rest for at least five minutes. In a separate bowl, mix together the mayo, sriracha sauce, salt, and pepper in a small bowl until well combined. To construct the sandwich, first, slice a baguette lengthwise and then into quarters. Place several heaping tablespoons of the sauce onto the bread with one cup of pork. Top with the pickled vegetable mixture and mint leaves, serve and enjoy!
