  • 1 whole chicken (approx. 3lbs)
  • 1 tbsp extra-virgin olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp oregano
  • ¼ tsp basil
  • Optional – add ¼ tsp of cayenne pepper and paprika for a spicy kick.

Preheat oven to 450 degrees. Remove all fat from chicken and rinse with cold water. Place chicken in a baking pan and rub with olive. In a small bowl, mix together salt, pepper, oregano, basil and then sprinkle over chicken. Add the additional ingredients for a bit of a kick. Bake the chicken in the preheated oven for 20 minutes. Reduce temperature to 400 degrees and continue to cook for about 40 minutes or until internal temperature reaches at least 165 degrees.
