Easy-to-Make Carrot Cake

This is a very simple carrot cake everyone enjoys.

  • 1 box moist spice cake
  • 1 C. water
  • 1/3 C. applesauce
  • 3 eggs
  • 2 C. grated carrots
  • 1/2 C. raisins
  • 2 tsp. grated orange peel

Heat oven to 350 degrees. Coat two 8-inch round cake pans with non-stick cooking spray. Combine cake mix, applesauce, water, and eggs in large mixing bowl. Beat on low for 1 minute; continue beating on medium 2 minutes, stir in carrots. Pour into prepared pie pans. Bake 30-35 minutes or until toothpick comes out clean. Cool 10 minutes and turn out onto rack and cool completely. Spread with frosting of choice. Orange or cream cheese frosting works best with it.
