This chili casserole recipe is a time saver! Make this in the morning, stick in refrigerator, bake after work or after a little league ball game. It's very filling and will warm you up on a cold night. This recipe won 1st place in a chili cook off!

1 Casserole


  • 2 15-oz. cans chili (no beans)
  • 2 15-oz. cans chili (with beans)
  • 1 bell pepper, diced
  • 1 med. onion, diced
  • 8 oz. Velveeta cheese, sliced
  • 1 1/2 C. Fritos corn chips, finely crushed
  • cooking spray

Saute bell pepper and onions, set aside. Spray casserole dish with cooking spray. Layer casserole in this order:

1st layer: chili with beans, bell pepper, onion, Velveeta

2nd layer: chili without beans, crushed corn chips.  Bake at 375 degrees for 30-45 minutes.
