Ready for a great low-carb alternative to mashed potatoes? Using cauliflower instead of potatoes for your traditional “mashed potatoes” is a great, healthy alternative because it’s without all the starch of potatoes. Add some Greek yogurt, and you won’t miss a thing!

  • 1 5.3-oz. container plain, fat-free Voskos Greek yogurt
  • 1 head cauliflower, cored and roughly chopped
  • 1 small (or 1/2 medium) onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 2 Tbs. butter
  • 1/4 C. grated Pecorino Romano cheese
  • salt, to taste
  • pepper, to taste

Bring a large pot of water to a boil. (You can boil your cauliflower in some chicken broth for a bit of extra flavor.) Add cauliflower and cook for about 8 minutes or until fork tender. Drain. In a food processor, blend onion and garlic. Add cauliflower, butter, greek yogurt, cheese, salt and pepper and blend some more. You want the finished product to be like a thick puree.
