  • 4 eggs, beaten
  • 1/2 C. spinach
  • 2 sliced white button mushrooms
  • 1/2 white onion, diced
  • 1/3 C. chopped green bell peppers
  • 1/3 C. chopped yellow bell peppers
  • 1/2 C. Parmesan cheese, shredded
  • 1/2 C. Monterey Jack Cheese, shredded
  • 2 T. butter
  • salt and pepper

In a large skillet and warm butter until it's bubbling. Pour eggs into skillet along with the veggies, cheese, salt and pepper to taste. Let cook until egg is set and starting to brown on the sides. Flip and let cook for 2-5 minutes, or until eggs are browned.

Serve warm.
