Filled Oatmeal Date Bars

A sweet oat crust is wrapped around a lemon, walnut, and date filling.

  • Filling:
  • 2 packages (8 oz. each) pitted dates, cut up
  • 1/2 C. sugar
  • Water
  • 1/4 C. lemon juice
  • 1/2 C. coarsely chopped walnuts
  • Oat crust:
  • 1-1/2 C. sifted flour
  • 1-1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 C. soft butter or margarine
  • 1 C. light brown sugar, firmly packed
  • 1-1/2 C. raw quick-cooking oats

In small saucepan, combine dates, sugar and 1 C. water over medium heat. Stir constantly until mixture is thickened, about 5 minutes. Remove from heat; stir in lemon juice and nuts; cool. Meanwhile, preheat oven to 375 degrees. Lightly grease a 13 x 9 x 2 pan. Make oat crust: Sift flour with baking soda and salt; set aside. In medium bowl of an electric mixer at medium speed, beat butter and sugar until light and fluffy. Add flour mixture and oats. With hands, mix until well-combined. Press half of the oatmeal mixture evenly into bottom of prepared pan. Spread with filling. Cover with remaining oatmeal mixture; press lightly with hands. Bake 25 to 30 minutes or until golden. Cool slightly. Cut into bars while warm.
