This recipe is one that can be tweaked and changed to appeal to all tastes. Any vegetable can be added or left out. Use what can be found easily in the season you're preparing it.

  • 2 medium potatoes cubed
  • 3 carrots peeled and chopped
  • 1 sweet potato or yam, sliced or cubed
  • 2 golden beets, cubed
  • 3 stalks of celery, chopped
  • 1 small onion, chopped
  • 6 garlic cloves, minced
  • 4 cups vegetable broth - chicken or beef broth can be substituted
  • 1 can tomatoes
  • 2 teaspoons Italian seasoning
  • 2 tablespoons sugar
  • salt and pepper to taste

Combine everything into a crockpot with the carrots and potatoes on bottom. Cook on low for 6-7 hours or on high for 5 hours. Potatoes should be done and the vegetables tender.
