Fluffy Lime Avocado Pie

This fluffy lime avocado pie is light, cool and refreshing after a heavy meal or great to take to a potluck! The light green color gives this dessert a nice look.

  • 1 8-10 inch pre-baked pie shell
  • 2 lg. ripe avocadoes (at least 2 C. flesh)
  • 1 14-oz. can sweetened condensed milk
  • 1/4 C. freshly squeezed lime juice
  • 1 lg. tub Cool Whip
  • 1 square dark chocolate


Make sure prebaked shell is cool before putting in the ingredients. Cut the ripe avocadoes in half. Use a large spoon to scoop out at least 2 cups of the flesh and put this into a large bowl. Mash it against the side of the bowl with the spoon. Next, add the sweetened condensed milk and stir mixture until smooth. Add lime juice and stir until well mixed. Carefully fold in Cool Whip and mix well. Add this mixture to the pie shell until full. (You may have extra filling - serve without pie shell if desired).

Take the dark chocolate and shave curls or sprinkle chocolate chips on top of the pie. Chill this pie at least 1 hour before serving.
