  • 1/2 stick of butter, softened
  • 1/2 C. sugar
  • 1 eggs, beaten
  • 2 ripe bananas, mashed
  • 1 C. flour
  • 1/2 tsp. baking soda
  • ½ tsp. salt
  • 1 C. fresh strawberries, chopped
  • 2 tsp. flour
  • For Frosting
  • 2 sticks of butter, softened
  • 4 oz. cream cheese, softened
  • 2 C. powdered sugar
  • 1 tsp. vanilla extract
  • 1/2 C. fresh strawberries, chopped

Preheat oven to 375 degrees. Spray a 9x5 loaf pan with non-stick spray. In a large mixing bowl, cream butter and sugar until fluffy. In a small mixing bowl, beat egg with a fork. Add the egg to the sugar mixture and beat until well mixed. Add mashed bananas and mix well. Sift together flour, baking soda, and salt. Gradually add dry ingredients to banana mixture until well combined. Fold in strawberries.

Pour batter into loaf pan and bake for 13-15 minutes. Reduce heat to 350 and bake for another 25-30 minutes until a toothpick comes out clean.

Meanwhile, beat butter and cream cheese with an electric mixer. Reduce speed to low and add powdered sugar. Add in vanilla and strawberries and mix well.

Let bread cool for 15 minutes and ice with frosting.
