  • 2 C. sugar
  • 1 C. canola oil
  • 3 eggs
  • 2 tsp. vanilla extract
  • 3 C. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. grated lemon peel
  • 1 tsp ground cinnamon
  • 1/4 tsp. baking powder
  • 2 C. shredded zucchini
  • 1/2 C. chopped walnuts

Preheat the oven to 350 degrees. Grease two 8x4 loaf pans. In a bowl, beat together the sugar, oil, eggs, and vanilla until completely incorporated. In another bowl, whisk together the flour, slat, baking sod, lemon peel, cinnamon, and baking powder. Gradually beat the second bowl into the sugar mixture, mixing until just moistened. Stir in the zucchini and walnuts.

Transfer the batter to the prepared pans and bake for 55 to 65 minutes, or until baked through. Cool for 10 minutes before removing the loaves from the pans.
