  • 5 cups of celery, chopped
  • 2 medium onions, diced
  • ½ cup of spinach
  • 1 cup of potatoes, peeled and chopped
  • 6 tablespoons of butter
  • 1 tablespoon of garlic powder
  • 5 cups of vegetable broth
  • salt and pepper, taste
  • optional: pinch of nutmeg

In a large sauce pan, heat the butter. When ready, add onions, garlic powder and a bit of salt and pepper, and sauté until soft. Add celery and cook, covered, for about 5 minutes. Add parsley and potatoes and cook for another 5 minutes, then add vegetable broth; simmer 10 minutes.
Let the contents cool a bit and puree it in a blender. Reheat this mixture in the sauce pan. Add salt and pepper to taste, then serve! If desired, top with a pinch of nutmeg.
