  • 2 slices country-style bread, 1/2-in. thick
  • oil, for brushing
  • 1 Tbs. mayonnaise
  • 2 slices mozzarella cheese
  • 3 slices tomatoes
  • 1 tsp. balsamic vinegar
  • salt and pepper, to taste
  • 2 fresh basil leaves

Heat an electric panini maker to the manufacturer's directions. Brush one side of each slice with oil. Lay the slices, oil side down, on a flat surface and spread each slice with 1 Tbs. mayonnaise. Place the cheese on one slice and top with tomato slices. Drizzle with the vinegar and season with salt and pepper. Top with basil and then the other slice of bread.

Place the sandwich in in the panini maker and cook for 3 to 5 minutes. Serve immediately.
