  • 5 ears of fresh corn
  • 1/2 onion, chopped
  • 3 T. cider vinegar
  • 3 T. extra virgin olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • ½ C. fresh basil leaves
  • 1 C. parmesan cheese

Begin by boiling salted water in a pot and place the corn in it. Cook the corn for 4 minutes. Drain and transfer it to ice water. When the corn is cool, cut the kernels off the cob and place the kernels in a bowl with the red onions, vinegar, olive oil, salt, and pepper. Once it is ready, toss the mixed veggies to a late and sprinkle with fresh basil and cheese.
