With Easter comes spring and that means fresh fruit. These bunny-shaped pancakes are a great way to use fruit in a cute and creative way.

  • 1 ½ cup of flour
  • 1 cup of buttermilk
  • 1 egg
  • 3 tablespoons of white sugar
  • 1 tablespoon of butter
  • 2 teaspoons of baking powder
  • 1 teaspoon of vanilla
  • 1 teaspoon of cinnamon
  • ¾ teaspoon of salt
  • 4 bananas
  • ½ cup of blueberries
  • ½ cup of strawberries, diced

As a skillet heats with a tablespoon of butter, combine the flour, sugar, baking powder, cinnamon and salt in a large bowl. In a separate bowl, whisk the egg with the buttermilk and vanilla. Slowly pour the wet ingredients into the dry ingredients until the mix is smooth and lump free. Spoon six medium size pancakes and 12 small pancakes onto the skillet, cooking each until each side is slightly brown.

Cut one banana in half, then dice one piece widthwise. Cut the other half of the banana into small strips for whiskers. Then, cut the other bananas in half and cut lengthwise for ears. To create the bunny, take one medium size pancake and place two small pancakes on top to mimic cheeks and place the banana strips on top. Place a strawberry on the center of the larger pancake for a nose. Above that place two diced bananas and two blueberries for eyes. Finally, place to banana pieces on top for ears. Enjoy!
