  • 2 pounds of cremini mushrooms
  • 2 cups of rice
  • 4 cups of vegetable broth
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 tablespoons of butter, divided
  • 4 tablespoons of olive oil, divided

Begin by bringing the rice, the chicken broth and olive to a boil, then cover and reduce heat to let simmer for 20 minutes, or until the rice is soft. As the rice cooks, sauté the cremini mushrooms, onion, garlic in one tablespoon of butter for five minutes. Once the mushrooms have browned, toss in with the rice and stir in with the remaining butter. Place the cover back onto the rice and let simmer together for an additional 10 minutes. Serve and enjoy!
