  • ½ cup of raisins
  • ½ cup of walnuts, chopped
  • 1 cup of rolled oats
  • 1 cup of flour
  • ½ cup of brown sugar
  • ½ cup of butter, melted
  • 1 cup of milk
  • 1 egg, beaten
  • 1 teaspoon of baking powder
  • 1 teaspoon + ½ teaspoon of vanilla extract
  • 2 tablespoons of water
  • 1 ½ cups of confectioners’ sugar

Preheat oven to 400 degrees Fahrenheit.
In a bowl, combine the butter, milk, egg and 1 teaspoon of vanilla extract; gradually mix in the oats, flour, brown sugar and baking powder. Fold in the raisins and walnuts and stir well. Scoop batter into each cup of a greased muffin tin and bake for about 20 minutes until top is golden brown. Let cool.
To make the glaze, take a small bowl and mix ½ teaspoon of vanilla extract, 2 tablespoons of water and confectioners’ sugar together.
Drizzle glaze onto the muffins once they’re completely cooled and serve!
