  • 1 lb. ground beef
  • ½ lb. Italian sausage
  • 2 C. mushrooms, chopped
  • 1 onion, diced
  • 2 T. olive oil
  • 1 C. chopped basil
  • 1 tsp. dried thyme
  • 2 T. balsamic vinegar
  • 1 (6 oz.) can tomato paste
  • 1 (8 oz.) can tomato sauce
  • 2 C. chicken broth
  • 2 C. béchamel sauce
  • 1 box oven-ready lasagna noodles
  • 1 ½ C. mozzarella cheese, shredded

In a large skillet, brown beef and sausage until cooked through. Add in oil, onion, and mushrooms; sauté until softened. Add in basil, thyme, balsamic vinegar, tomato paste, tomato sauce, and chicken broth. Bring mixture to a boil, reduce heat, and simmer for 20 to 30 minutes until mixture thickens. Spread a bit of béchamel sauce at the bottom of your baking dish and assemble lasagna by layering noodles, meat mixture, and béchamel. Top with mozzarella and freeze for up to 3 weeks covered with foil. Let thaw completely in refrigerator overnight and bake for 40 minutes covered at 350 degrees.
